Içli köfte means “köfte with a filling”. The outer shell is made from fine bulgur wheat kneaded with a little minced meat and spices until it holds together like a dough. Each piece is hollowed out by hand, filled and sealed into an oval with pointed ends.
The filling
Minced meat cooked slowly with onion, red pepper paste and spices. Some families add chopped walnut for crunch; if you have a nut allergy, tell us and we will confirm exactly what goes into your order.
Cooking and serving
They can be fried until the shell is crisp and golden, or boiled for a softer bite. Serve warm with lemon wedges and a fresh salad. They are a favourite at celebrations and family gatherings, and they sit well on a buffet because they are easy to eat with your hands.
